Aunt Stephanie’s GF Chocolate Chip Cookies
Ingredients
- 1 1/4 cup Namaste GF perfect blend flour
- 1 cup almond flour
- 1 tsp baking soda
- 1 tsp salt
- 2 ounces cream cheese (room temperature)
- 3/4 cup (12 tbsp) melted butter
- 1 cup packed brown sugar
- 1/2 cup sugar
- 1 1/2 tsp vanilla extract
- 2 egg yolks (room temperature)
- 2 cups semi-sweet chocolate chips
Directions
- Whisk together flours, baking soda and salt – set aside
- In stand mixer, place cream cheese and pour in melted butter
- Add brown sugar and sugar and mix for 2 mins
- Add vanilla and egg yolks (1 at a time) on low/medium speed until well mixed
- Add flour mixture beating on low until combined
- Add chocolate chips
- Scoop onto cookie sheet and put in freezer for 4+ hours (can put into a bag to store for later after if desired)
- When ready to bake, set out for 15 minutes to soften
- Preheat oven to 375 degrees and cook for 11-12 minutes
