Bakery Style Blueberry Muffins

Ingredients

Crumble Topping Ingredients

  1. 4 tbsp butter, melted
  2. 1/2 cup sugar
  3. 1/2 cup flour
  4. Sprinkle of cinnamon
  5. Sprinkle of salt

Muffin Ingredients

  1. 1 stick (1/2 cup) of softened butter
  2. 1 cup white sugar
  3. 2 eggs
  4. 1 tbsp lemon juice
  5. 2 tsp vanilla extract
  6. 2 cups flour
  7. Sprinkle of salt
  8. 2 tsp baking powder
  9. 1/2 cup milk
  10. 2 cups blueberries

Directions

Crumble Topping Instructions

  1. Stir all ingredients with a fork until clumped together. Set aside.

Muffin Instructions

  1. In a bowl, combine butter and sugar and mix until creamed together.
  2. Add eggs, lemon juice, and vanilla extract.
  3. Sift flour into a separate bowl with a sprinkle of salt and baking powder, slowly mix into butter/egg/sugar mixture.
  4. Add milk and make sure not to over mix.
  5. Coat 2 cups blueberries lightly with flour in a separate bowl.
  6. Mix coated blueberries into batter with hands or very gently with a spoon.
  7. Scoop batter mix into liners, add crumble on top of batter.
  8. Bake at 375°F for 30 minutes.

Tips

  1. Ensure butter is softened for easier mixing.
  2. Do not over mix the batter to keep muffins light and fluffy.
