Ingredients
- 5 lb chuck roast
- Seasoning for chuck roast
- 3 red onions, diced
- 2 red bell peppers, diced
- 2 heads of garlic, minced
- 1 can of beer
- 2 14.5 oz cans of diced fire roasted tomatoes
- 2 28 oz cans of crushed tomatoes
- 1 7 oz can of chipotle chilies in adobo sauce
- 3 tablespoons chili powder
- 1 tablespoon cumin
- 2 cups of beef broth, reduced by half
- Salt and pepper to taste
Directions
- Smoke the chuck roast until tender, approximately 202 degrees Fahrenheit, and let it rest.
- Saute the diced onions and bell peppers until thoroughly browned.
- Add the minced garlic and let it brown as well.
- Dice up the smoked chuck roast into bite-sized pieces.
- Combine all ingredients in a crock pot.
- Cook on high for about 4 hours.
