Ingredients

  1. 5 lb chuck roast
  2. Seasoning for chuck roast
  3. 3 red onions, diced
  4. 2 red bell peppers, diced
  5. 2 heads of garlic, minced
  6. 1 can of beer
  7. 2 14.5 oz cans of diced fire roasted tomatoes
  8. 2 28 oz cans of crushed tomatoes
  9. 1 7 oz can of chipotle chilies in adobo sauce
  10. 3 tablespoons chili powder
  11. 1 tablespoon cumin
  12. 2 cups of beef broth, reduced by half
  13. Salt and pepper to taste

Directions

  1. Smoke the chuck roast until tender, approximately 202 degrees Fahrenheit, and let it rest.
  2. Saute the diced onions and bell peppers until thoroughly browned.
  3. Add the minced garlic and let it brown as well.
  4. Dice up the smoked chuck roast into bite-sized pieces.
  5. Combine all ingredients in a crock pot.
  6. Cook on high for about 4 hours.

Tips

For a deeper flavor, consider smoking the chuck roast with your favorite wood chips. Adjust the amount of chipotle chilies based on your heat preference.
