Grilled Cheese Beef and Rice Burritos
Ingredients
- 1 lb ground beef
- 1 chopped onion
- 1 TBSP minced garlic
- 1/2 tsp salt and pepper
- 1/4 tsp cayenne
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp dried cilantro
- 17 oz pouch Spanish style rice
- Burrito size flour tortillas
- Sour cream
- Taco Bell creamy chipotle sauce
- Pancho’s White Queso
- Tortilla strips
- Mexican style four cheese blend shredded cheese
- Taco sauce
Directions
- Add ground beef and a chopped onion to a griddle over medium-high heat.
- Once the beef is cooked through, drain the grease.
- Add all seasonings and stir well.
- Add the Spanish style rice to the griddle with 2 tbsp of water.
- Cover with a griddle dome.
- Once the rice has softened, stir the rice and beef together.
- Build burritos by laying out a flour tortilla.
- Top with sour cream, beef & rice mixture, creamy chipotle sauce, queso, tortilla strips, and a little bit of shredded cheese.
- Roll the burrito up and repeat until all burritos are made.
- Turn the griddle heat all the way down to low.
- Lay out some shredded cheese and place a burrito on top.
- Use a spatula to carefully fold/roll the burrito over into the cheese.
- Serve with taco sauce and enjoy!

Tips
For extra flavor, you can add more chipotle sauce or queso to taste. Make sure to cook the beef thoroughly and drain the grease to avoid a greasy burrito. Use a griddle dome to help soften the rice quickly.
