Hyatt’s Smoked Salmon
Ingredients
- Brown sugar
- Kosher salt
- Salmon fillets (2-3 per pan)
Directions
- Make mixture of 2/3 brown sugar, 1/2 kosher salt and stir together
- In glass pan, put 1/4” of mixture on the bottom of the pan and top with 2-3 salmon fillets
- Wrap and let it sit overnight, the fish will be semi-hard when you take it out of the mixture
- Turn smoker to 220 and lightly scrape off salt mixture from the salmon super
- Sprinkle fillets with a little bit of brown sugar
- Smoke for 1.5 hours or so
