Perfect Pumpkin Bread
Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/4 cups granulated sugar
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1/4 teaspoon allspice
- 1 cup pumpkin puree
- 1/2 cup neutral oil (canola or avocado oil)
- 2 eggs
- 1/3 cup milk (dairy or non-dairy)
- 2 teaspoons vanilla extract
- 1/2 cup chocolate chips (optional)
Directions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the flour, sugar, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, cloves, and allspice. Mix until fully combined.
- Make a well in the center of the dry ingredients.
- Add the pumpkin puree, oil, eggs, milk, and vanilla extract into the well.
- Lightly mix the wet ingredients together in the center, then gradually incorporate the dry ingredients until just combined.
- If using, gently fold in the chocolate chips.
- Pour the batter into a greased loaf pan.
- Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
- If the top begins to brown too quickly, tent with foil to prevent over-browning.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
