Perfect Pumpkin Bread

Ingredients

  1. 1 1/2 cups all-purpose flour
  2. 1 1/4 cups granulated sugar
  3. 1 teaspoon baking soda
  4. 1/4 teaspoon baking powder
  5. 1 teaspoon salt
  6. 2 teaspoons cinnamon
  7. 1/2 teaspoon ginger
  8. 1/2 teaspoon nutmeg
  9. 1/4 teaspoon cloves
  10. 1/4 teaspoon allspice
  11. 1 cup pumpkin puree
  12. 1/2 cup neutral oil (canola or avocado oil)
  13. 2 eggs
  14. 1/3 cup milk (dairy or non-dairy)
  15. 2 teaspoons vanilla extract
  16. 1/2 cup chocolate chips (optional)

Directions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the flour, sugar, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, cloves, and allspice. Mix until fully combined.
  3. Make a well in the center of the dry ingredients.
  4. Add the pumpkin puree, oil, eggs, milk, and vanilla extract into the well.
  5. Lightly mix the wet ingredients together in the center, then gradually incorporate the dry ingredients until just combined.
  6. If using, gently fold in the chocolate chips.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
  9. If the top begins to brown too quickly, tent with foil to prevent over-browning.
  10. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
