Saucy Beef & Broccoli Ramen
Ingredients
- 2 packs ramen or noodles of choice (170 grams total)
- 1 lb flank steak, thinly sliced
- 3 cups broccoli florets, chopped into bite-sized pieces
- 1/4 cup water (for steaming the broccoli)
- 1 tsp sesame oil
The Sauce:
- 2 tbsp olive oil
- 1 tsp sesame oil
- 1 tbsp rice wine vinegar
- 1/4 cup soy sauce (low sodium)
- 1 tbsp banh mi sauce
- 1/2 cup beef broth (unsalted or low sodium)
- 1 tbsp honey
- 1 heaping tbsp cornstarch
- 3 garlic cloves, chopped fine
- 1 tbsp fresh ginger, chopped fine
- 1/4 tsp red pepper flakes
Garnish:
- Sesame seeds (optional)
- Green onions (optional)
- Peanuts (optional)
Directions
- Cook ramen according to package instructions, removing 2 minutes early. Strain and set aside.
- Slice steak into thin pieces and add sesame oil. Mix and let rest.
- Chop broccoli and set aside.
- Combine sauce ingredients, whisking until smooth.
- Heat canola or peanut oil in a large pan, cook beef until browned. Remove and set aside.
- Steam broccoli with water in the pan for 2-3 minutes.
- Lower heat; add beef, ramen, and sauce. Simmer until sauce thickens.
- Garnish with sesame seeds, green onions, and peanuts.
