Saucy Beef & Broccoli Ramen

Ingredients

  1. 2 packs ramen or noodles of choice (170 grams total)
  2. 1 lb flank steak, thinly sliced
  3. 3 cups broccoli florets, chopped into bite-sized pieces
  4. 1/4 cup water (for steaming the broccoli)
  5. 1 tsp sesame oil

The Sauce:

  1. 2 tbsp olive oil
  2. 1 tsp sesame oil
  3. 1 tbsp rice wine vinegar
  4. 1/4 cup soy sauce (low sodium)
  5. 1 tbsp banh mi sauce
  6. 1/2 cup beef broth (unsalted or low sodium)
  7. 1 tbsp honey
  8. 1 heaping tbsp cornstarch
  9. 3 garlic cloves, chopped fine
  10. 1 tbsp fresh ginger, chopped fine
  11. 1/4 tsp red pepper flakes

Garnish:

  1. Sesame seeds (optional)
  2. Green onions (optional)
  3. Peanuts (optional)

Directions

  1. Cook ramen according to package instructions, removing 2 minutes early. Strain and set aside.
  2. Slice steak into thin pieces and add sesame oil. Mix and let rest.
  3. Chop broccoli and set aside.
  4. Combine sauce ingredients, whisking until smooth.
  5. Heat canola or peanut oil in a large pan, cook beef until browned. Remove and set aside.
  6. Steam broccoli with water in the pan for 2-3 minutes.
  7. Lower heat; add beef, ramen, and sauce. Simmer until sauce thickens.
  8. Garnish with sesame seeds, green onions, and peanuts.

Tips

  1. Swap noodles with udon or rice noodles if preferred.
  2. Slice beef thinly for even cooking.
